Ingredients

  • 4 cups (about 200 g) mixed greens (e.g., romaine, baby spinach)
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (120 g) sliced cucumbers
  • ½ cup (60 g) shredded carrots
  • ¼ cup (30 g) thinly sliced red onion
  • ½ cup (120 ml) mayonnaise (light or regular)
  • 2 tablespoons (30 ml) lemon juice
  • 1 teaspoon (5 ml) Dijon mustard (optional)
  • Salt and pepper, to taste

Directions

  1. Prep the vegetables
    Rinse and dry the mixed greens, then chop or tear them if needed. Prepare the tomatoes, cucumbers, carrots, and onion.
  2. Make the dressing
    In a small bowl, whisk together the mayonnaise, lemon juice, mustard (if using), salt, and pepper until smooth.
  3. Combine in a large bowl
    Place the prepared vegetables in a large salad bowl.
  4. Dress the salad
    Drizzle the dressing over the vegetables. Toss gently to ensure everything is evenly coated.
  5. Serve
    Enjoy right away or chill for a few minutes to let the flavors meld. Add extra seasoning to taste.
