2 steaks (about 8–10 oz/225–280 g each; e.g., sirloin or flank)
3 cloves garlic, thinly sliced
1 tablespoon (15 ml) olive oil (plus extra if needed)
1 tablespoon (15 g) butter

2 large russet potatoes, scrubbed and cut into fries
1 tablespoon (15 ml) vegetable oil

Directions
Prep the fries Preheat your oven to 400°F (200°C). Toss the cut potatoes with vegetable oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
Bake the fries Place the baking sheet in the preheated oven and bake for 20–25 minutes, flipping halfway through, until the fries are golden and crisp.
Season the steaks Pat the steaks dry with paper towels. Generously season both sides with salt and freshly ground black pepper.
Sear the steaks Heat a skillet over medium-high heat. Add the olive oil, and once hot, place the steaks in the skillet. Sear for about 3–4 minutes per side for medium-rare (adjust time for desired doneness).
Add garlic and butter Reduce the heat to medium. Add the butter and sliced garlic to the skillet. Tilt the pan and use a spoon to baste the steaks with the melted butter, cooking the garlic slices until they turn golden but not burned.
Rest the steaks Transfer the steaks to a plate and let them rest for at least 5 minutes to retain their juices. Reserve the garlic slices on top for a flavorful garnish.
Serve Slice the steaks against the grain if desired, then plate alongside the crispy oven-baked fries. Sprinkle with chopped parsley for a fresh touch.
