Combine the base mixture In a large bowl, mix together the ground chicken, egg, breadcrumbs, garlic, herbs, salt, and pepper until just combined.
Stuff with cream cheese Take a scoop of the chicken mixture and flatten it in your palm. Place a small spoonful of cream cheese in the center, then fold the chicken mixture around it, forming a sealed meatball. Repeat until all meatballs are made.
